Couscous with chicken: Hearty and nutritious

Originally from Milford, Alvin Turner lived in Niger, French West Africa, when he was in the Peace Corps. It was during that time that the licensed psychologist, now a Wilmington resident, learned to cook hearty and nutritious meals that sometimes made him want to relax on his own couch. When he isn't creating healthful dishes, he enjoys fine dining, racquetball, listening to jazz and traveling. He and wife Kate have three daughters.
Couscous with chicken
For the chicken:
2 tablespoons olive or vegetable oil
2 1/2- to 3-pound broiler-fryer chicken, cut up
4 small carrots, cut into 2-inch pieces
2 medium onions, sliced
2 medium turnips, cut into fourths
2 cloves garlic, finely chopped
2 teaspoons ground coriander
1 1/2 teaspoons salt
1 teaspoon instant chicken bouillon
1/4 teaspoon ground red pepper
1/4 teaspoon ground turmeric
1 cup water
3 zucchini, cut into 1/4-inch slices
1 can garbanzo beans (chickpeas) drained
Heat oil in Dutch oven until hot. Cook chicken in oil until brown on all sides. Add carrots, onions, turnips, garlic, coriander, salt, bouillon, red pepper and turmeric. Cover with water, bring to boil. Reduce heat, cover and simmer 30 minutes. Add zucchini to chicken mixture, cover and cook until thickest pieces of chicken are done and vegetables are tender (about 10 minutes). Add beans; heat five minutes.
For the couscous:
1 1/2 cups couscous
3/4 cup raisins
1/2 teaspoon salt
1 cup boiling water
1/2 cup margarine or butter
1/2 teaspoon ground turmeric
Mix couscous, raisins and salt in 2-quart bowl; stir in boiling water. Let stand until all water is absorbed, two to three minutes. Melt margarine in 10-inch skillet, stir in couscous and ground turmeric. Cook and stir for four minutes. Mound couscous in center of heated platter; arrange chicken and vegetables around couscous. Serve with French bread.

Weiss was a member of a panel that included three psychiatrists and a criminal attorney. Meanwhile, the Seattle U.S. Attorney's office announced that Dennis Priven cannot be retried for the murder.  | June 14: Peace Corps suspends Haiti program After Uzbekistan, the Peace Corps has announced the suspension of a second program this month - this time in Haiti. Background: The suspension comes after a US Embassy warning, a request from Tom Lantos' office, and the program suspension last year. For the record: PCOL supports Peace Corps' decision to suspend the two programs and commends the agency for the efficient way PCVs were evacuated safely. Our only concern now is with the placement of evacuated PCVs and the support they receive after interrupted service. |
