I have worked with Carol since 1992. We met when I hired her to help me develop my Healthy Oven Baking Mix Line. Since that time, she has been an invaluable consultant to not only this site, www.baking911.com, but when I wrote my book, The Healthy Oven Baking Book, by Sarah Phillips, Doubleday, 1999. Carol is sort of like a watch-dog on this site; she always makes sure the technical information is accurate. Carol also gives practical advice because of her well-grounded background, and as she says, her Mid-Western upbringing.
Carol Lloyd, MS in Food Science from University of Illinois in 1979. Carol grew up on a farm in Indiana. The family made their own bread, catsup, sauerkraut, and pickles. Everything was homemade or garden grown.
Current: Manager of Research and Development for Contessa Food Products, California
Prior, self-employed for 10 years consulting for well-known grocery and specialty food companies at Austin Food Tech, California She's developed and helped commercialize over 650 food products, including mine.

OTHER:
4-H club member in foods for 9 years, later becoming a judge for the State Fair entries.
Peace Corps volunteer to Brazil 1974-1976 in foods and nutrition programs.
Teacher assistant for the Experimental Foods and Foods in Business course at Purdue in 1978. During that summer:
Carol baked over 60 turkeys for Swift'n Company so they could advise homemakers how best to prepare their Thanksgiving turkey.
B.S. degree from Purdue University in Vocational Home Economics Education.
